Grape Varieties: Chardonnay and Pinot Noir.

Region: Estate grown on proprietary vineyards which rest alongside our orange, citrus and mango groves in NW Victoria.

Vinification: Made from classic sparkling varieties of Chardonnay and Pinot Noir, Azahara Sparkling Rosé displays a delicate pink hue. Early picked estate grown grapes were gently crushed. Free run juice only used for a cool, slow fermentation, followed by extended yeast lees ageing.

Each year, the best parcels of Chardonnay are folded into a modified solera system, so that fresh flavours mingle with older, complex characters. Pinot Noir is then blended in and secondary fermentation (Charmat) is then initiated to produce bubbles and bring everything into harmony.

Grape Variety: Chardonnay.

Region: Coonawarra, South Australia.

Harvest: 05 – 13 March 2018.

Vintage: 2018 was an ideal vintage in Coonawarra. Harvest started slightly earlier; good rainfall in the leadup followed by a warmer and drier season than usual, produced outstanding Chardonnay fruit exhibiting excellent varietal and regional expression.

Oak Maturation: Select parcels (13% of the total blend) were maturated in new French oak barrels for an average of 10 months, adding complexity, texture and suppleness.
